Sometimes there’s no point in coming up with a recipe, or tinkering around with another – sometimes things are just perfect the way they are.
This is absolutely true of these pork carnitas tacos from J. Kenji Lopez-Alt, courtesy of the Serious Eats website. The recipe can be found online HERE. His book is available on amazon HERE, which I highly recommend.
The dish itself is simple, and oh-so-tasty. You can make ahead if entertaining a crowd, then finish when your guests arrive. Because it’s so easy to finish, you can serve this as a small plate with other dishes.
Slow cook pork shoulder (butt) in orange juice and spices, then shred the soft meat with a fork – before making a salsa with similar ingredients (making your shopping list really short and simple). When ready to serve, crisp under the grill and pop onto some warmed corn tortillas with the salsa, some fresh coriander and a crumbling of feta for a salty finish.
I’m a big fan of Kenji and the Serious Eats website in general. He also has a book available, which is well thumbed in my house and worth a look – not just for the recipes but also the geeky science behind techniques and how to lift that last bit of flavour from your ingredients.
